Salmon & Salad

So I don't have a particular recipe to share with you, but in case you needed an easy healthy dinner idea I am posting this.

Tonight I made pan-seared salmon over a bed of quinoa with a side salad.



Tonight I made the quinoa with 2 cups of chicken stock to give the quinoa more flavor. Once fully cooked I stirred in a tablespoon of coconut oil. The salmon was seasoned with salt & pepper and cooked in coconut oil.

It was delicious! Give it a shot!

  1. You're so cool Shan! What in the heck is quinoa?? Looks like italian bread crumbs from here :] I like this. I like salmon. I wish my men family weren't SUCH prissy eaters. Taylor is just like me, so she loves everything I love. Which makes it easy! She even likes sushi w/wasabi &&& eats with chopsticks :] I'm a proud momma! That salad looks fantastic! Now all you need to do is drench it in RANCH! <3 Loves.

  2. Ang: Quinoa is a whole grain, gluten free seed. Seed however doesn't describe the texture. If you were to cut a grain of rice in half that is basically what quinoa is like. We use it as an alternative to white rice. It cooks quickly and goes well with so many things!

    You are raising that little girl right! She loves food, just like US!

  5. That salmon looks sooo good..I have been drooling over it for 5 days now! Where do you get the quinoa? I'm glad Angel asked because I was wondering the same thing.

  6. We got our quinoa from Costco about 4 months ago and we still have yet to use all of it. I have found it at our local commissary as well as the grocery store. You have to look down the aisle with the "health" foods, like the organic stuff. If you make it Tessa, make it with chicken stock instead of water, it adds so much flavor and is delicious. I will make all my future quinoa with chicken stock.
